BALSAMIC CHICKEN STRAWBERRY SUMMER SALAD

INGREDIENTS
-1 chicken breast
-¼ cup of soycutash (mixture of edamame, corn, and red pepper- you can get this at any grocery shop in the frozen section)
-1 tbs. of balsamic vinegar
-½ avocado
-2 strawberries
-2-3 cups of organic spring greens

DIRECTIONS
1. Boil the chicken breast until nearly cooked, then chop it up into mini chunks.
2. Sautee the soycutash in a pan over high heat. If you have a nonstick pan, no need to use any oil.
3. Then add in the chicken breast chunks. Pour about 1 tbs. of balsamic vinegar and make sure everything gets a pice of the action! Do until corn has some slight browning on it’s surface.
4. Cut strawberries into circles. Cut avocado into slices.
5. Plate by grabbing a few handfuls of spring greens and creating a bed. Then pour your chicken/soycutash mixture on top and decorate with the strawberries and the avocado.

HEALTHY BANANA BERRY CREPES RECIPE

DIRECTIONS

1. Mix your dry ingredients together (oats, cinnamon) and blend into a fine powder in a Magic Bullet or a regular blender.
2. Then add half a ripe banana, an egg (or 2 egg whites), and almond milk. Blend!
3. Take the batter and pour into a pan on low-medium heat. Just a thin line layer!
4. After you see mini bubbles from on top, flip it! If you can flip in the air – DO IT! It’s exhilarating. This batter will make about 3 crepes about 8-9 in diameter!
5. Now fill up your crepe with fresh fruits! I used 4 strawberries and other half of the banana! Roll it up.
6. OPTIONAL- to top, you can add nonfat Greek Yogurt and a honey drizzle!
The whole recipe without the honey and yogurt is only 250 cals with no added sugar, and using all natural ingridients! Nothing crazy here.

BANANA AND PECAN LOAF

Banana & pecan loaf
INGREDIENTS
For the Loaf Cake Base
-175g softened butter, plus extra for greasing
-175g golden caster sugar (or any kind of sugar)
-3 eggs
-140g self-raising flour
-85g ground almonds
-½ tsp baking powder
-100ml milk
-2 small, very ripe bananas
-50g pecans, chopped, plus extra

For the Icing
-85g softened butter
-100g icing sugar, sifted
-1 tsp vanilla extract
Directions
Heat oven to 160C/140C fan/gas 3. Grase and line a 2lb/900g loaf tin with a long strip of baking parchment. To make the loaf cake batter, beat the butter and sugar with an electric whisk until light and fluffy. Add the bananas in a few chunks and beat in with the eggs, flour, almonds, baking powder and milk until smooth – the whisk will mash the bananas. Stir in the pecans, then scrape into the tin. Bake for 45-50 mins until golden, risen and a skewer pokes in comes out clean. Cool in the tin, then lift out.
Beat the butter, icing sugar, and vanilla. Spread on top of the cooled cake and scatter with more chopped pecans.
